Chiyada Beef

Briefly sear the meat, which is beautifully marbled with fine fat. The melting sweetness of the fat and the overflowing umami of the lean meat with every bite spread throughout your mouth—it's enough to make you let out an involuntary sigh. Chiyada Beef is a breed of Japanese Black Wagyu believed to have originated in Niimi. It inherits the bloodline of 'Takenotani-tsuru,' the oldest lineage in Japan, and is a prestigious breed considered to be the root of Wagyu nationwide. The cattle are raised with great care in the high-altitude Chiya region, benefiting from the cool climate and significant temperature fluctuations. A long history of improvement dating back to the Bunsei era (1820s) supports this superior taste. An all-encompassing umami that can be called the very origin of Wagyu. It is a traditional brand beef that Niimi is proud of.
