Its origin lies in the 'Indian Yakisoba,' a curry-flavored dish served in Takahashi City school lunches during the 1970s and 80s. This nostalgic flavor, once beloved by children, has been rediscovered and reborn as a local gourmet dish by adding the region's famous tomatoes. The richness of the curry and the refreshing acidity of the tomato create a seemingly strange yet perfectly harmonious combination. Spicy, yet somehow nostalgic. It is an addictive dish from Bitchu Takahashi.
