Meiji Gonbo (Meiji Burdock)
Grown in the Meiji district of Yoshii-cho, Ibara City, 'Meiji Gonbo' is a high-quality burdock known only to connoisseurs. It is cultivated slowly over time in fine-grained, heavy red clay fields spread across a plateau at an altitude of approximately 400m. Because it takes 2 to 3 months longer to harvest than typical burdock, it features a tender flesh, a high aroma, and excellent shelf life. It has a long history, with legends stating that the local lords of the late Edo period also enjoyed it. Harvesting from heavy clay soil is labor-intensive and difficult to cultivate repeatedly, making it a rare specialty in recent years. The peak season is from November to early January. When prepared as kinpira or tempura, you can enjoy the earthy aroma and the rich, nourishing flavor of the mountain village.
