Kasaoka Ramen

A steaming bowl featuring a clear, shimmering soy sauce soup. With a single sip, the savory umami of chicken spreads through your palate. What sits atop the noodles is chicken rather than pork. This is a unique dish exclusive to Kasaoka, featuring what is known as 'Kashiwa Chashu.' In Kasaoka, where poultry farming has been prosperous since ancient times, meat from spent hens was easily obtainable, leading to the establishment of a ramen culture using this 'kashiwa' (chicken). It is said that this style was enjoyed in local diners even before the war, and was officially named 'Kasaoka Ramen' around the year 2000. The firm, well-cooked chicken chashu releases a rich umami flavor with every bite. With its light chicken bone soy sauce base and the chewy texture of kashiwa, this is a nutritious Chinese-style noodle dish nurtured by the city of Kasaoka, the town of chicken.
