Bukkake Udon

You pour the thick sauce all around the firm noodles, top them with green onions, tempura scraps (tenkasu), and a raw egg, then mix it well before eating. When you slurp it up, the punchy dashi flavor spreads throughout your mouth. It is said to have originated at 'Furuichi,' an udon shop in Kurashki. An anecdote remains that during the 1960s/70s, the president of the shop, while eating between mahjong games, ate a dish made by his child where toppings and sauce were poured over zaru udon; he was so inspired by its deliciousness that he created this style. While it was originally a local flavor of Kurashiki, it is now widely known as 'Bukkake Udon' and has become popular enough to win consecutive national championships. A specialty of Kurashiki that is delicious whether served cold or hot. Once you try it, it's a bowl you will find yourself craving again and again.
