Suita Kwai

After a fluffy texture in the mouth, a subtle bitterness lingers. Despite its small size, it has a rich flavor that is unforgettable once tasted—Suita Kwai is such a deeply flavorful vegetable. It is a historic crop recorded in the 1701 document 'Setsuyo-gun Dan' as saying, 'Though small in shape, the taste is extremely good.' It is said that during the Edo period, it was presented to the Imperial Palace in Kyoto, a tradition that continued for nearly 200 years. It is also known that the botanist Dr. Tomitaro Makino identified it as native to Japan and gave it its scientific name. Because of the way it sprouts, it has also been cherished as a symbol of good fortune (associated with 'omedetai,' meaning auspicious). A traditional vegetable of Naniwa that has been passed down through the threat of extinction. Its small tubers are packed with a long history.
