Hamana Lake Oysters
Once you open the shell, you are met with plump, swollen meat. They are excellent grilled, steamed, or fried. With a single bite, a rich umami and sweetness burst forth along with the minerals of the sea. Lake Hamana is a brackish lake where seawater and freshwater mix. It is said that the history of oyster farming began during the Meiji era, when natural oysters were discovered growing among the stones during the construction of a bridge for the Tokaido Line. Growing for approximately one and a half years in this nutrient-rich lake, these oysters boast large, thick meat with a deep, intense flavor. The season runs from November until early spring. In winter, the oyster huts lined up along the lakeshore are a quintessential part of the Lake Hamana landscape. Please come and enjoy piping hot grilled oysters.
