In this historic land that once supplied grains to the Ise Grand Shrine, the traditional method involves kneading the noodles without using water, instead adding mountain yam (yamato) as a binder. The broth is carefully prepared from chicken carcasses. It is a bowl filled with the wisdom of farming families who cultivated large amounts of buckwheat and barley.
