Daiya Kiku
A mellow cup brewed with 'Onogami-sui,' the underground water from Mount Tateshina. This is 'Daiya Kiku,' brewed by Toda Sake Brewery in Chino City. The brewery began in 1717, originally founded as a rice wholesaler before later moving into sake brewing. The ingredients used for brewing include the pure underground water originating from Mount Tateshina and Miyama Nishiki, a type of sake rice grown in Nagano Prefecture. Notably, this sake is also known to have been enjoyed by the film director Yasujiro Ozu, who developed his movie scripts in the Tateshina Highlands, and its reputation has grown alongside such anecdotes. It features a soft mouthfeel with a gentle umami that spreads slowly. It is a Shinshu local sake you can enjoy slowly while reflecting on the stories of the master director who once cherished it.
