In the castle town of Ueda, there is a sake that possesses a purity so profound it makes one straighten their posture—that is Shinshu Kirei. It is brewed by Okazaki Sake Brewery, founded in 1665. Known for using water from the Sugadaira water system, the sake is crafted by the brewery's Toji, Misato Okazaki. The name was derived from auspicious words wishing for longevity: 'the crane lives for a thousand years, and the turtle for ten thousand.' In recent years, its popularity has surged, production has grown significantly over the last decade, and it is now being delivered overseas to places such as Taiwan and Dubai. With a fresh, clean mouthfeel accompanied by expanding umami and aroma, its character changes with every sip, making you reach for the next glass. It is a masterpiece that Ueda is proud of, and its scarcity is well-justified.
