Daishinshu
When poured into a glass, a clear aroma rises instantly. With a single sip, a fruit-like richness and a clean aftertaste spread comfortably across the palate. Brewing Daishinshu is Daishinshu Sake Brewery, located in Matsumoto. Founded in 1880 (Meiji 13), it is a brewery with a history spanning over 140 years. They create authentic local sake using rice exclusively from contract-grown 'Hitogokochi' and 'Kinmon Nishiki' varieties born in Nagano Prefecture. Even after establishing a new brewery in Matsumoto in 2020, they continue to insist on brewing everything by hand rather than relying on mechanization. Under the slogan 'Heavenly Beautiful Sake,' it is a cup woven from the water, rice, and hands of Shinshu. It is one of the representative fine sakes of the Shinshu region.
