Mizuo

Brewed with spring water near Nozawa Onsen, this sake offers a smooth and elegant flavor. This is 'Mizuo,' brewed by Tanaka-ya Sake Brewery in Iiyama,Oku-Shinano. Founded in Meiji 6 (1873). The sake's name is derived from Mt. Mizuo, where the brewing water is drawn. Under the creed of 'brewing what cannot be made anywhere else,' they are committed to using only rice grown in Nagano Prefecture. A major feature is their active use of the rare sake rice 'Kinmon Nishiki,' which is cultivated only in the nearby village of Kijimadaira. The harsh winters of deep northern Shinano allow for a slow, low-temperature fermentation. From the first sip to the second, and from the second to the third—this is a nutrient-rich local sake that Pride of Oku-Shinano, where the deliciousness increases with every sip.
