Shichinami
A single cup brewed in the extreme cold of winter at a brewery in the Kiso Valley, looking up toward Mount Ontake. This is 'Shichinami,' a famous sake of the Kisoji region produced by Shichinami Sake Brewery in Kiso Town. Founded in 1892. In the land of Kiso, surrounded by deep mountains at the foot of the sacred Mount Ontake, they have been brewing sake using pure water and clear mountain air. What the brewery treasures is not just being bound by sweet or dry, but pursuing a true 'umami' that satisfies the drinker. The name is said to be derived from a place name associated with Minamoto no Yoshinaka and the auspicious saying, 'If you laugh seven times, seven fortunes will come.' The crisp finish pairs well with the bounties of the Kiso mountains and mountain stream fish. If you visit the nostalgic Kisoji road, please do enjoy a glass.
