With Mount Asama to the north and the Yatsugatake Mountains to the south, this is a long-established local sake that has been brewing for over 330 years in the Saku Plain, surrounded by magnificent nature. Chikumanishiki Brewery was founded in 1681. Beneath the brewery, shallow and deep wells have been dug to utilize the subsoil water from the Asama mountain range—low in iron and rich in minerals—switching between them depending on the desired character of the sake being brewed. Their commitment lies in carefully processing rice, primarily using Miyamanishiki grown in Nagano Prefecture. In this land where the longest river in Japan, the Chikuma River, flows, the sake brewed slowly during the bitter cold of winter has been known as 'Otoko-zake' (masculine sake) for its robust umami.
