When poured into a cup, a clear, cloudless aroma rises instantly. With a single sip, a soft umami dissolves in the mouth, followed by a clean, crisp finish. True to its name, it is a calm and elegant drink, much like still water. What has made Osawa Shuzo famous is its representative brand, 'Meikochisui.' It is characterized by a smooth and clear taste, brewed using the subsoil water of Mount Tateshina. Founded in 1689 (the 2nd year of Genroku) in the Mochizuki area of Saku, they have been brewing sake for over 320 years. It is truly astonishing that an old jar in the brewery is said to still hold the 'oldest sake in Japan,' brewed in the very year the brewery was founded. A pure cup nurtured by the waters and history of Saku. A renowned sake of Shinshu that has been loved for generations.
