Brewed with the subsoil water of the Central Alps, every sip allows the natural umami of the rice to spread gently. This is 'Shinano Nishiki,' brewed by Miyajima Sake Store in Ina City. Since its founding in 1911, this brewery has been committed to being a 'local brewery.' The sake rice used for brewing includes varieties like Miyama Nishiki, grown by contract farmers in the local Ina Valley, using as few pesticides as possible. Furthermore, they produce only Junmai sake, which directly reflects the flavor of the rice. While repeatedly winning gold medals at the National New Sake Awards, they prioritize a sake profile that accompanies the dining table rather than one that is flashy. A crisp, dry style that enhances food and is not tiring to drink. It is a local sake that contains the very essence of the Shinshu Ina terroir.
