Filling the cup is a crisp and clear taste, brewed with subsoil water from the Central Alps. When chilled thoroughly, a clean umami unique to this frigid region glides smoothly down your throat. Brewing Kikusui is Kikusui Sake Brewery, the only brewery in Iida, Southern Shinshu. They craft their sake with a commitment to pure subsoil water from the Central Alps and high-quality sake rice grown in Nagano Prefecture. What makes them interesting is their method of storage. Since 1997, they have purchased a disused railway tunnel and repurposed it for the brewery. The temperature inside the tunnel is maintained at approximately 11 degrees Celsius year-round, serving as a natural refrigerator that allows the sake to mature slowly without using electricity. A local sake of Iida, nurtured by the blessings of the Alps. A single cup filled with the essence of the Southern Shinshu landscape.
