Masumi
When poured into a cup, a soft aroma reminiscent of apples and pears gently wafts up. With a single sip, a clear umami and a clean aftertaste unfold comfortably. Masumi is brewed by Miyasaka Brewing, located in Suwa. Founded in 1662, its name is derived from the 'Masumi no Kagami' (Mirror of Pure Clarity), a sacred mirror of the Suwa Grand Shrine. Most notably, the brewery takes great pride in the fact that 'Kyokai Yeast No. 7,' now widely used in breweries across the country, was discovered in the moromi (mash) of this very brewery after the war. This famous yeast significantly raised the quality of sake nationwide, and Masumi became known as its birthplace. A single cup woven from the pure waters of Suwa, Shinshu rice, and the famous yeast. With its soft aroma and clear taste, it is counted as one of the representative premium sakes of Shinshu.
