Shima-zushi

With a single bite, the sweetness of the vinegared rice, the savory depth of the soy sauce marinade, and the sharp sting of mustard all layer together. Shima-zushi is a traditional sushi born on Hachijojima. In an era before refrigeration, the technique of 'zuke' (marinating in a soy-based sauce) was developed to preserve the freshness of fish on this warm island. It is said that after the sushi culture arrived from Edo during the Meiji era, it evolved uniquely to suit the island's environment. The use of prepared mustard instead of wasabi is a remnant of a time when wasabi was not available on the island. This style of Shima-zushi is also said to have later spread to the Ogasawara Islands. Sweet vinegared rice paired with a sharp kick of mustard. It is a single piece of sushi infused with the wisdom of the island, offering a flavor distinct from mainland styles.
