Soba in Kanda
The aroma of the dipping sauce drifts even outside the shop's noren curtains. Kanda is a town where the traditions of Edomae soba are still very much alive. In Kanda Awajicho (formerly Renjakucho), long-established shops line the streets, such as 'Kanda Yabu Soba,' said to have been founded in 1880, and 'Kanda Matsuya,' founded in 1884. From the 'Yabu' style—one of the three major systems of Edo soba—artisans have passed down the techniques of noodle making and sauce preparation through generations. The Matsuya shop was built in the early Showa era and has been selected as a Tokyo Metropolitan Historical Building. Dip the thinly sliced noodles just slightly into the rich sauce, then slurp. The authentic style of the Edokko (people of Edo) still remains here.
