When prepared as ohitashi, a fresh green aroma rises from behind its subtle bitterness. Ashitaba is a vibrant vegetable representative of the Izu Islands. A plant in the Apiaceae family, its name is said to derive from its vigorous vitality—so much so that it is said 'even if you pick the leaves today, they will bud again tomorrow.' Native to Japan, it grows wild along the coasts from Boso to the Izu and Ogasawara Islands. In Hachijojima, where it is a dietary staple, it has also been known as 'Hachijo-so.' It even appears in the Edo-period herbal book 'Yamato Honzo' as a medicinal herb good for invigorating the body. It is packed with beta-carotene and minerals. Use it in tempura, ohitashi, or even green juice. A robust green nourished by the island sun.
