Shima-zushi

With just one bite, you experience the sweetness of the vinegared rice, the savory depth of the soy sauce marinade, and the sharp, pungent sting of mustard hitting your nose. Shima-zushi is a local specialty born in the Hachijojima island of the Izu Islands. It is said to have originated in an era before refrigeration, when freshly caught fish were preserved by marinating them in soy sauce (a technique known as 'zuke'). After the Meiji era, when sushi culture arrived from Edo, it developed uniquely to suit the lifestyle of the warm islands. The use of mustard instead of wasabi is a remnant of the time when wasabi was not easily available on the islands. The sweetness of the rice paired with the sharp sting of mustard makes this a piece packed with island wisdom, offering a flavor quite different from mainland sushi.
