Okutama's hand-made soba is a bowl that allows you to taste the full bounty of the mountains. In this area, blessed with rich nature, many shops—centered around the Mt. Mitake area—continue the tradition of preparing their dipping sauce using mountain spring water. Soba restaurants that evoke a sense of history, such as Tamagawaya (founded in 1915) and shops housed in thatched-roof farmhouses, still protect these dedicated flavors today.
