Sawanoien Tofu
As you take a spoonful, the sweetness of the soybeans slowly spreads across your palate. The tofu from Sawanoien is simple yet profound. This dish can be enjoyed at Sawanoien, directly operated by the brewery Ozawa Shuzo. It is carefully prepared using brewing water and carefully selected soybeans. At the directly managed dining area, the rich, creamy silken tofu (oboro tofu) and yuba are highly acclaimed, with the natural umami of the soybeans concentrated within. It is likely because of the pure water used to brew sake in this region for over 300 years that the tofu achieves such a mellow finish. Tasting a block of tofu while being caressed by the valley breeze is an exceptional experience.
