Hachioji Napolitan (Hachi-Napo)
The red of the ketchup paired with an abundance of chopped onions. With one sip, a flavor that is both nostalgic and new spreads across your palate. This is 'Hachi-Napo.' It was devised in 2014 by Mr. Nakajima, a local restaurateur. Out of respect for the local specialty, Hachioji Ramen, a loose rule spread throughout the town: the dish must feature 'plenty of chopped onions' and 'ingredients from Hachioji,' leaving the rest to be freely arranged by each restaurant. Born from a desire to see the youth of this academic city eat their fill, it is said that the dish now even appears in elementary and junior high school lunches within the city. It makes you want to visit different shops to compare their unique takes on this single dish.
