Hachioji Ramen
Freshly chopped raw onions float on the surface of the soup, providing a crisp texture. Without them, it simply cannot be called Hachioji Ramen. The soy sauce base, the layer of lard, and the chopped onions—it is only when these three elements come together that the bowl is complete. The origins are said to date back to around 1959 (Showa 34). It is told that after being inspired by a ramen with onions encountered in Hokkaido, the shop owner struggled with how to remove the pungency of the onion. They eventually discovered that using oil could suppress the sharpness and bring out the sweetness. The texture of the onions is delightful against the sweet and savory soup. This is a gentle bowl of ramen nurtured in Hachioji. Please come and taste this local soul food at one of the famous shops in the city.
