Hiroo Shishamo

Hiroo Town boasts the highest volume of Shishamo landings in all of Japan. Every year, a vast amount of authentic Shishamo is landed at Tokachi Port in Hiroo. Shishamo is a truly indigenous Japanese fish that inhabits only a very limited area along the Pacific coast of Hokkaido. The roe-filled Shishamo, which can only be caught during the spawning season from October to November, is a true seasonal delicacy unique to this specific time and region. When lightly seared, the popping texture of the eggs and the savory umami of the fragrant flesh fill your mouth. It tastes entirely different from the imported varieties often seen in supermarkets.
