Sapporo Miso Ramen
Beyond the rising steam, the aroma of miso and lard wafts gently through the air. As you slurp the curly noodles, the thick, hearty soup clings to them, warming you to your very core—especially on cold days. It was created by Morito Omiya, the owner of 'Aji no Sanpei' in Susukino. He is said to have perfected miso ramen in 1955 after a process of trial and error, sourcing various misos from across Japan and presenting prototypes to regular customers to gather their feedback. The tradition of adding plenty of vegetables for nutrition and selecting curly noodles that pair well with the miso all began with this single bowl. Eventually, this method spread throughout Sapporo and then across the entire country. It is a warm bowl of ramen that has long supported the winters of Sapporo.
