Suttu Atka Mackerel
Raised in the rough waves of the Sea of Japan, the Atka mackerel from Suttu is rich in fat with thick, meaty flesh. The kanji for Atka mackerel (hokke) combines 'fish' and 'flower,' and as the name suggests, it is said to be at its most delicious when it is covered in plenty of fat during the cherry blossom season. Atka mackerel is truly the representative fish of this town, accounting for approximately 80% of the fish landed at Suttu Port. Each fish, with its firm flesh developed in cold waters, possesses a presence unique to its place of origin. When dried and grilled, the juicy flesh and savory skin spread their deliciousness throughout your mouth. Please enjoy this premium fillet, which is distinctly different from the common Atka mackerel you might find at an izakaya, offering a taste unique to its production area.
