Age-imo (Fried Potato)
When stopping at a roadside station during a drive in Hokkaido, the first thing you'll want to eat is 'Age-imo.' It is a simple snack made by coating whole potatoes in a sweet batter and deep-frying them; the irresistible texture features a crispy exterior and a fluffy interior. This Age-imo specialty was originally born in 1968 at the 'Boyo Nakayama' roadside station on the Nakayama Pass. It reportedly began as an idea to fry local potatoes, inspired by corn dogs, for travelers crossing the pass. The secret to its deliciousness lies in using Baron potatoes from the foothills of Mount Yotei and cooking them with the underground water from the mountain. Served with three pieces skewered on a stick, it is considered soul food for Hokkaido residents.
