Tsurui Cheese
This is a natural cheese produced in Tsurui Village, a dairy farming village where Red-crowned Cranes descend to rest. It is carefully handmade using fresh raw milk from cows raised on vast pastures. The cheese production is handled by 'Rakurakukan,' which is funded by the village. A chief technician who studied cheesemaking in Denmark took on the challenge of creating a cheese that suits the Japanese palate, and in 2007, it was honored as number one in the National Natural Cheese Contest. It offers a simple, pure flavor, where human hands have added just a touch to the raw milk nurtured by the earth, wind, and cows. Please try this natural cheese born in the home of the Red-crowned Cranes, whether enjoyed on its own or as an accompaniment to wine.
