Saroma Lake Scallops
Scallops raised in the rich waters of Saroma Lake are characterized by their firm texture and concentrated sweetness. Saroma Lake, Japan's largest brackish water lake, is actually the birthplace of scallop aquaculture. They use a method called 'Jimaki' (bottom-seeding) here. Juvenile scallops born in Saroma Lake are released into the Sea of Okhotsk to be raised over several years. By utilizing the '4-year rotation harvesting' method to protect resources, they are able to maintain consistent quality. These plump scallops are a product of the cold waters of the Okhotsk and the nutrients of the brackish lake. Their sweetness stands out whether eaten as sashimi or grilled.
