Saroma Lake Scallops

The scallops raised in Saroma Lake, Japan's largest brackish lake, are a renowned delicacy in both farmed and wild forms. In fact, Saroma Lake is the birthplace of scallop farming. The occurrence of juvenile scallops was confirmed in 1931, and research into aquaculture began in 1934. They utilize a method called 'Ji-maki' (bottom seeding). Juvenile scallops born in Saroma Lake are released into the Sea of Okhotsk to be raised over several years. By employing the '4-year rotation harvesting' system to protect resources, they are able to maintain stable quality. These thick-fleshed scallops are nurtured by the cold waters of the Okhotsk and the lake's abundant plankton. Please enjoy the exquisite sweetness, whether served as sashimi or grilled, right in their place of origin. These are the pride of the birthplace of scallop farming.
