Shishamo (Smelt)
Many of the shishamo you see in supermarkets are imported Capelin. However, true 'Hon-shishamo' can only be caught along the Pacific coast of Hokkaido. The Hidaka coast is one of the precious production areas for this authentic variety. Like salmon, Hon-shishamo are born in rivers in the spring, grow in the sea, and return to their natal rivers in the autumn to spawn. They are characterized by a plump, reddish appearance unique to this Japanese species, offering a flavor that is worlds apart from the imported varieties. When grilled, the roe-filled shishamo bursts with tiny, popping eggs and the savory umami of the fragrant flesh fills your mouth.
