Biratori Wagyu

Biratori Wagyu is a brand of wagyu carefully raised in the town of Biratori, at the foot of the Hidaka Mountains. It all began in 1962 with the introduction of breeding cattle from Shimane Prefecture, and over many years, it has grown into a renowned brand. The breed is Japanese Black. It is said that by enduring the freezing winters of Biratori, the umami of the meat becomes highly concentrated. Supported by outstanding fattening techniques and meticulous management, many of the cattle are graded as A5 rank, demonstrating their true capability. With fine marbling and elegant fat that melts in your mouth, you will be amazed by its quality when enjoyed as steak or sukiyaki. Please enjoy this wagyu, the pride of Biratori, at your dining table on special occasions.
