Samani-produced Hidaka Kombu
This is Hidaka Kombu harvested from the seas of Samani, located at the southern tip of the Hidaka Mountains. The waters of Samani, facing the Pacific Ocean, are rich in nutrients, allowing for the growth of kombu with a deep, robust umami flavor. Samani is a region recognized as the 'Apoi-dake UNESCO Global Geopark.' The unique geology of Mount Apoi, which is rare even by global standards, and the surrounding sea at its foot nurture these natural bounties. Hidaka Kombu is soft and easy to simmer; when used in stews, its umami dissolves smoothly into the dish, and when used for dashi, it provides an elegant aroma. This is a kombu unique to Samani, woven from the earth and the sea. Please incorporate this single piece, packed with the blessings of both mountain and ocean, into your daily cooking.
