Rishiri Sea Urchin
A treat available only from June to August—Ezo Bafun sea urchin from Rishiri, raised on kelp. What makes Rishiri sea urchin so delicious is that they grow by eating the highest quality Rishiri kombu (kelp). The umami of the kelp is concentrated directly into the sea urchin, creating a rich sweetness and a melt-in-your-mouth texture. The vibrant orange flesh is appetizing just to look at. It is a flavor unique to this northern island, nurtured by cold, clear waters. Our top recommendation is, of course, the Uni Don (sea urchin bowl). Topped with plenty of creamy, sweet sea urchin over hot rice—it is a luxurious summer dish that lets you savor the full bounty of the Rishiri sea. We highly recommend visiting the area to taste it during its peak season.
