These scallops are raised in the cold, clear waters of the Sea of Okhotsk, resulting in firm texture. The Sea of Okhotsk is a harsh yet bountiful sea visited by drift ice in winter. It is rich in plankton, providing an ideal environment for scallop growth. Raised using the 'jimaki' (broadcast seeding) method—where juvenile shells are sown on the seabed to grow slowly in conditions close to nature—these scallops have firm flesh and a deep, intense sweetness. They are packed with the powerful flavors unique to the northern seas. Our top recommendation is sashimi. When you bite into the plump adductor muscle, a melting sweetness and the umami of the sea spread throughout your mouth. They are also absolutely exquisite when pan-fried in butter or prepared as deep-fried scallops.
