In fact, this village was once even called the 'wealthiest village in Japan' due to its scallops. Sarufutsu, the northernmost village in Japan, boasts one of the highest volumes of wild scallop landings in the country. After resources plummeted due to overfishing in the past, the village successfully implemented Japan's first large-scale juvenile scallop release program in 1971, leading to a magnificent recovery. Since then, they have continued a planned fishing approach, releasing juveniles and allowing them to grow steadily over four years. Scallops raised in the cold, nutrient-rich waters of the Sea of Okhotsk have firm flesh with highly concentrated sweetness. When served as sashimi, the large adductor muscles are sweet; when grilled, their umami intensifies. From rock bottom to number one in Japan—this is a product that can be called the very pride of the village, supporting its miraculous comeback.
