Hokkaido Shirayebi (Northern Shrimp)
Small boats with triangular sails glide silently through the bay—this is the Hokkaido Shirayebi, caught via the Utsabune fishing method, a summer tradition of Notsuke Bay. Hokkaido Shirayebi is a rare shrimp that lives only in clean waters. Because they turn a vibrant red when boiled, they are often called the "rubies of the sea." The seabed of Notsuke Bay, their habitat, is lush with seagrass, serving as a cradle for these shrimp. The Utsabune fishing method, which has continued since the Meiji era, involves turning off the engine and moving using only the wind on the sails. This eco-friendly wisdom that avoids damaging the seagrass is still passed down today and has been designated as a Hokkaido Heritage. When freshly caught and boiled, the plump texture and concentrated sweetness are truly exceptional.
