Salmon and Ikura (Salmon Roe)
For 10,000 years, people have laughed and cried alongside the salmon—Shibetsu is truly a 'sacred land of salmon.' Located at the foot of Shiretoko, the town of Shibetsu boasts one of the highest salmon landings in the country. In autumn, salmon migrate upstream, and the soy-marinated ikura made from their fresh eggs takes center stage in this season. The town is home to the 'Shibetsu Salmon Science Museum,' which opened in 1991 and features numerous salmonids. At the fishway tanks, you can observe salmon swimming upstream up close, allowing you to learn plenty about their ecology. With glistening, succulent ikura and fatty salmon fillets, a bowl of hot rice topped generously with roe is a feast in itself. It is a bounty from a town where you can eat, taste, and learn all about salmon.
