Mashu Soba
A beautiful pale green color and a rising rich aroma—this is Teshikaga's 'Mashu Soba,' enough to impress any soba connoisseur. Town of Teshikaga, overlooking Lake Mashu and Lake Kussharo, is a cool region perfect for buckwheat cultivation. The buckwheat grown here is characterized by its deep greenish hue and strong sweetness, nurtured with great care to ensure it is harvested at the perfect time. Due to low production and distribution volumes, it is often called 'phantom soba,' and orders from famous restaurants never cease. Some shops serve their self-cultivated buckwheat using the 'three fresh' method: freshly ground, freshly kneaded, and freshly boiled. Like Lake Mashu, which boasts some of the highest transparency in the world, the flavor is clear and free of impurities. It is a bowl you must taste after exploring the great outdoors.
