Bluefin Tuna

Riding the Kuroshio Current northward and tightening its flesh in the fierce currents of the Tsugaru Strait—this is the Matsumae Bluefin Tuna, known as the king of tuna. Matsumae, once the only castle town in Hokkaido, flourished as a trading hub connecting Ezo (Hokkaido) and Honshu. Off its coast in the Tsugaru Strait, bluefin tuna can be caught, having accumulated rich fat by feeding on Japanese flying squid and Pacific saury. Fishermen have honed their skills in rapid processing and Ike-jime (brain spiking) right on board. Today, its quality is recognized at the Toyosu Market and used in high-end sushi restaurants. The balance between the meltingly smooth fat and the firm red meat is exceptional. It is a true king of the northern seas, known to those in the know.
