Kutchan Potatoes
When talking about the deliciousness of potatoes, Kutchan cannot be overlooked. It is a leading potato-producing area in the Shiribeshi region. Niseko's cool climate and well-drained volcanic ash soil, brought about by the eruptions of Mount Yotei, create an ideal environment. This blessed setting produces potatoes with a fluffy texture and a robust sweetness. Their quality is highly regarded even among the various potatoes grown in Hokkaido. When used in dishes that highlight the excellence of the ingredient itself—such as croquettes, french fries, or Hokkaido's specialty imomochi (potato mochi)—the deliciousness is exceptional. Even simply steaming them and serving with salt or butter is enough to fully convey the true power of Kutchan potatoes.
