Do you know of the only town in Hokkaido without a public water system? That is Higashikawa, known as the 'Town of Water.' In this town, people live solely on the abundant groundwater springing from the Daisetsuzan Mountains. At the water source intake, pure water at approximately 7°C flows continuously throughout the year, boasting a quality so high it can be drunk straight from the source. The 'Higashikawa Rice' grown with this water is regarded as one of the finest among Hokkaido-grown varieties. This blessed water is also used in the sake brewing process of Sanzenzakura Sake Brewery. Nurtured by pure water, this rice possesses a distinct sweetness and clarity. The luster and aroma upon cooking are exceptional. Please enjoy a bowl of rice that can only be experienced in this town of water.
