Ikamemshi (Squid Stuffed with Rice)
Born from the rice shortages during the war, this is Japan's number one ekiben. It was devised in 1941 at Abe Shoten in Mori Town. At a time when rice was difficult to obtain, however, Japanese flying squid were in abundant supply. By stuffing the squid bodies with rice and simmering them in a sweet and savory sauce, it became possible to feel full even with a small amount of rice—this ingenuity led to the birth of this ekiben. After being featured in ekiben competitions held at department stores after the war, it quickly gained fame and has since been a regular top-tier contender.
