Ishikari Nabe

Ishikari Nabe is a representative local hot pot of Hokkaido, featuring chunks of salmon and fish bones simmered with vegetables in a miso-based broth. Its charm lies in its rich, nourishing flavor, infused with the savory essence of the salmon. Its roots lie in Ishikari, where salmon fishing has been prosperous since the Edo period. It is said to have originated from 'Dai-nabe,' a dish where fishermen would celebrate a large catch by tossing freshly caught salmon into a pot. Surprisingly, it was only after the war that it came to be named 'Ishikari Nabe.' It has been certified as a '100 Year Food' by the Agency for Cultural Affairs and has also received the Expert Special Award. This hot pot is like a nostalgic landscape of the Hokkaido dining table.
