This amber-colored rice is infused with the savory essence of chicken. Bibai's Torimeshi is a seasoned rice dish cooked with chicken and offal sautéed with soy sauce, sugar, and sake. Because no unnecessary ingredients are used, the charm lies in its unique flavor where the richness of the chicken truly stands out. Its roots trace back to the Meiji era's pioneer period. It is said that a farm owner who settled in the Nakamura district encouraged poultry farming to support the livelihoods of tenant farmers, and began cooking chicken with rice to entertain guests. Served as a celebration of the joy of being able to harvest rice, this heartfelt dish has been loved across generations as a local soul food, alongside Bibai Yakitori.
