Biba Yakitori

Bibai's yakitori is quite unusual. The local style involves skewering various chicken offal, such as liver, heart, and gizzard, all on one single skewer. Interspersed between the meat is the region's famous onion; when grilled, its sweetness increases, creating an excellent pairing with the chicken. Its origins date back to around 1955. It is said to have begun when Fukutaro Mifune, who ran a food stall, decided it was 'too wasteful' to discard the organs and instead prepared them on skewers. With its hearty volume and deep flavor, this dish was beloved as a source of stamina for workers during the era when the coal mines flourished. Grilled fragrantly in a savory sauce, these offal skewers are a true soul food of Bibai that pairs perfectly with beer.
