In Shibetsu, which calls itself the 'Town of Sheep,' sheep are a special presence. The lamb from the Suffolk breed—with its adorable white faces and black noses—features moderate marbling, achieving a balance of firm texture and tenderness. It has a reputation for being very easy to eat due to the minimal characteristic sheep odor. The secret lies in the rearing process. In addition to pasture, the sheep are fed plenty of grains such as Shibetsu-grown wheat, soybeans, and beet pulp, resulting in a soft meat texture rich in umami. A key feature is that they grow larger than usual. This is our prideful brand of mutton, treated as a luxury item even within Hokkaido. Whether enjoyed as Jingisukan (Genghis Khan BBQ) or as a steak, you can fully savor its exceptional quality.
